If you’re like me, a night out on the town usually includes some delicious food and cocktails. What I love about the new Eccles Theater, is that they are trying to bring both of those important components to your evening in one stop – right at the theater itself. 

I don’t know about you, but sometimes it can be difficult carving out time for dinner and drinks before a 7 or 8 pm show, which can really limit your options.

Enter Encore Bistro and its new cocktail line up!

I was able to spend an afternoon at the Encore Bistro with some friends from Cuisine Unlimited (Cuisine Unlimited operates the food and beverage for Eccles Theater) to taste the new cocktail menu and talk about what they are trying to do for our food and beverage community, within this beautiful new theater that we are so lucky to have in Salt Lake!

Encore’s signature cocktails are all spins on the classics, and are incredibly approachable. My personal favorite was the Encore Breeze, with Elijah Craig Bourbon, Cointreau, and ginger beer. But you’re sure to find one on the menu that speaks to your personal cocktail preferences! They can also mix you up a cocktail of your choice — if you prefer something like an Old Fashioned or Manhattan.

Here is a quick run down of what Encore is stirring up:

Dented Brick Gin-Gin Mule: Dented Brick Akeyle Gin, Gomaine de Canton, lime juice, ginger beer, and fresh mint $10

Live Martini: Perfect for dessert! Reyka Vodka, Ryan’s Irish Cream, Sweet Vermouth, Espresso, sprinkled with chocolate zest $10

Encore Breeze: Elijah Craig Bourbon, Cointreau, Ginger Beer $11

Antelope Island Punch: Antelope Island Rum, Grenadine, orange, pineapple juice $11

El Lago Salado: Lunazul Tequila, Cointreau, lime, orange juice $10

Encore Bistro is using some great local spirits from Dented Brick and there are plans to use more local brands where they can in the future. It was so lovely to sit in the beautiful theater, look out the incredible windows, and enjoy a cocktail treat.

Also, not only is Encore serving up cocktails, but they are also doing special dinners on nights of events and shows! If you have tickets, be sure to check their website to see what’s on the menu the night of your show at encorebistroslc.com.

And, after the performance? Don’t miss the Late Night Happy hour with a small bites menu of only $1.50 to compliment your after-show libation. Choose from a cheese tray, ships and salsa, or a tapas plate!

If you don’t have tickets to a show anytime soon, make sure to pop over to Encore Bistro for lunch (I was able to try a few different menu items that were delicious!) — or even a lunch cocktail if you are entertaining clients. I can’t think of a better place to showcase what Salt Lake City has to offer than lunch at such a beautiful theater, with a summer cocktail in hand. Don’t miss the Grown-up Grilled Cheese Sandwich or the Thai Chicken Wrap!
