When you have raspberries that are about to go bad in your fridge,
what do you do? 

You make simple syrup, that’s what you do. 

This cocktail was born from nearly bad raspberries – and I loved it. So, you should make one too!

Here’s the recipe…

Raspberry Simple SyrupRaspberry simple syrup:

Simple syrup is made from equal parts sugar and water. And you can really add any other components you would like to add flavor. Fruit works super well. I did 2/3 cup water, 2/3 cup sugar, and about 10 raspberries. Boil and then let simmer for about 6-8 minutes, strain into a jar, then cool. (Simple syrup will last about 2 weeks in your fridge)

Raspberry Bourbon CocktailCocktail:

2.5 oz bourbon
1.50 oz fresh lemon juice
1 oz raspberry simple syrup
2 dashes Bitters Lab aromatic bitters
Sparkling water
Fernet Branca float
Garnish: lemon and rosemary

Raspberry Bourbon CocktailTo make:

  • Shake the bourbon, lemon, bitters, and simple syrup in a shaker with ice.
  • Pour in a collins glass over ice cubes
  • Top with sparking water
  • Finish with a Fernet Branca float (pour about .75 oz over the back of a spoon to allow the Fernet to sit on top of the cocktail)
  • Garnish with a lemon wheel and sprig of rosemary
